Michelle, you’re right, lemon “icebox cake” is similar to the chocolate version but uses vanilla wafers, and a lemon flavored cream or combination of lemon pudding and cream. I make a version that’s actually more like a trifle using ladyfingers, lemon curd and cream. If I have some time this weekend. I’ll whip up a batch this weekend and post it here.
