But what I loved most about this post is that it brought me back to my childhood - we used to make (what my mom called) Ice Box Cake when I was a kid. But, it wasn't like this! It had graham crackers lining the bottom, then a layer of chocolate pudding, then a layer of whipped cream, then another layer of graham crackers, then more pudding and whipped cream then a final layer of graham crackers. Now that I think about it, the recipe is kind of white trash, but whatever, it was AWESOME when I was a kid. i may have to make it again! But I think your version is a bit more adult-friendly! It was always a favourite, although a rare treat as I think her recipe contains sherry so it was only made on 'grown up' occasions!
