Yamaimo a.k.a. Nagaimo is a Japanese root veggie

It’s a long tan skinned root veggie that’s typically 2-3″ in diameter and is sparsely covered with little scraggly “hairs”. Peeled and grated it has a viscous slimy texture similar to raw eggs and is used as a topping for cold soba noodles and rice. Sliced, it has a crisp (though slimy) texture similar to jicama and sunchokes and goes great in a salad. In the grocery stores they typically cut it into shorter lengths and sell it with other produce.
